Everything Bagel Sandwich

On an everything bagel, creamy avocado, handmade scallion black pepper cream cheese, and peppery arugula are stacked high. This quick and delicious breakfast sandwich is ready in minutes!




Instructions


For the Cream Cheese:


In a small food processor, pulse the room temperature cream cheese until it is softly beaten. Fold in the black pepper, salt, and chopped scallion in a mixing bowl. Season with salt and pepper to taste, then set aside for assembly.


Sandwich Assembly:

1.In a small bowl, place the arugula leaves. Toss with a small drizzle of olive oil to coat. Salt & pepper to taste.


2. An Everything bagel should be sliced and toasted. Spread a fair amount (about 2 tablespoons) of the scallion black pepper cream cheese spread on the bottom half. Top with sliced avocado and arugula leaves, a pinch of flaky salt, and the other half of the bagel. Serve by slicing in half crosswise.



Ingredients

Homemade Scallion Black Pepper Cream Cheese:

  • 8 ounces (1 package) cream cheese

  • ½ teaspoon cracked black pepper

  • pinch of kosher salt

  • 1 heaping tablespoon finely sliced scallion, green parts only


For the Sandwich Assembly:

  • 1 cup baby arugula

  • extra virgin olive oil for drizzling

  • 1 high-quality Everything seasoning bagel

  • roughly 2 tablespoons scallion black pepper cream cheese

  • ½ ripe sliced avocado

  • flaky salt for the top
