The berry season in the summer is a tremendous delight. This is a simple way to combine berries with cheesecake, and it's a nice twist from standard pudding and fruit parfaits.
1. Cream the cream cheese and sugar together in a small mixing bowl until creamy. Lastly, fold in the whipped topping.
2. Layer a fourth of the cream cheese mixture and a fourth of the berries in each of two parfait glasses. Layers should be repeated. If desired, top with more whipped topping. Chill until ready to serve.
2 ounces cream cheese, softened
4 teaspoons sugar
2/3 cup whipped topping
1-1/2 cups mixed fresh berries
Additional whipped topping, optional
